Sausagemaking

A project that has been long in the works, but only very recently successful. Around 2021, I saw a recipe for venison red wine sausages which sounded amazing, and I wanted to make them myself. I ordered the cheapest meat grinder that money could buy, and was defeated when I saw it smearing metal powders into the meat. Many years later, a friend bought a proper meat grinder and I finally made my own sausages! The first batch of what I think will be many to come, though I will likely only post them if I have something interesting to say.

Venison Red Wine Sausages

My first batch, and venison with red wine sounded like a great, and interesting, pairing. The red wine was a cheap Claret. The venison was from a roe buck that my brother harvested at my aptly-themed stag-do. Mixed with about 25% pork fat, as the venison was very lean.
